  • 6 oz smoked prosciutto
  • 4 oz sliced prosciutto
  • 8 oz 1000-day aged Gouda cheese
  • 8 oz sharp cheddar cheese
  • 8 oz apricot cherry cranberry goat’s milk cheese
  • 4 oz sliced Pepper Jack cheese
  • 8 oz traditional French Brie
  • 11 oz fig butter
  • 5 oz sweet and spicy pecans
  • 4 oz pumpkin spice pumpkin seeds
  • 2 Granny Smith apples, sliced
  • 2 Honeycrisp apples, sliced
  • 1 bunch Concord grapes
  • 1 bunch Champagne grapes
  • 6 fresh figs, halved
  • 10 oz stone-ground wheat crackers
  • 2 baguettes (11 oz each), sliced
  • 11 oz naturally flavored candy corn
  • Fresh lemon juice as needed

Instructions

  1. Gather all ingredients and a 20-inch round platter or board.
  2. Wash grapes and other fruit; halve fresh figs.
  3. Slice apples and immediately brush slices lightly with lemon juice to prevent browning.
  4. Slice firm cheeses ahead of time; reserve soft cheeses to add shortly before serving.
  5. Portion fig butter, pecans, and pumpkin seeds into small bowls or containers.
  6. Keep crackers and bread separate and sealed until serving time.
  7. Start the layout by placing bowls and large items (fig butter bowls, small pumpkins) slightly off-center on the platter.
  8. Place whole cheeses and grape bunches on the board next, creating visual anchors.
  9. Fold or roll sliced cured meats and arrange them in clusters near complementary cheeses.
  10. Group complementary flavors together (for example, brie with figs and prosciutto; hard cheeses with salami and crackers).
  11. Fill gaps with sliced cheeses, nuts, seeds, fruit, and crackers to balance textures and color.
  12. Slice the baguette just before serving and arrange the slices close together to keep them soft.
  13. Add soft cheeses, sliced fruit, and crackers within about an hour of serving to keep everything fresh.
  14. Use small containers for spreads, nuts, and seeds, and provide a separate knife for each cheese to avoid flavor mixing.
  15. Top up crackers and bread as needed during service.
