  • ¼ cup light corn syrup
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Crush graham crackers into fine crumbs using a food processor or a sealed bag and rolling pin.
  3. Stir crumbs with melted butter, sugar, and cinnamon until evenly combined.
  4. Press the mixture firmly and evenly into a 9-inch pie plate to form the crust.
  5. Bake the crust at 375°F for 7 minutes, then cool completely.
  6. Beat softened cream cheese with light brown sugar, salt, vanilla, and corn syrup until smooth and lump-free.
  7. Whip heavy cream with powdered sugar in a separate bowl until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until light and homogeneous.
  9. Spread the filling evenly into the cooled crust and smooth the top with a spatula.
  10. Loosely cover the pie with plastic wrap and refrigerate until firm, at least 4 hours or overnight.
  11. Alternatively, if skipping the bake step for the crust, press the crust firmly into the pan and chill for at least 1 hour to set.
