Instructions

  1. Preheat oven to 450°F (232°C) and place a parchment-lined baking sheet in the oven or ready to catch drips.
  2. In a bowl, combine 1 cup all-purpose flour, ½ cup packed brown sugar, ½ cup granulated sugar, and 1 teaspoon cinnamon; add ½ cup chilled cubed butter and cut in with a fork until coarse crumbs form, using your hands to create larger clumps as needed.
  3. Peel, core, and slice 8 medium Granny Smith apples about 1/8-inch thick; toss with ⅓ cup granulated sugar, 3 tablespoons flour, ½ tablespoon lemon juice, ½ teaspoon lemon zest (optional), 1 teaspoon cinnamon, and ⅛ teaspoon nutmeg until evenly coated; reserve any juices.
  4. Fit a single pie crust into a deep-dish pie plate.
  5. Pile the coated apple slices high into the crust and spoon any reserved juices over the apples.
  6. Evenly distribute the crumble topping over the apples and gently press so it adheres in larger pieces.
  7. Place the assembled pie on the prepared baking sheet and bake at 450°F for 15 minutes.
  8. Reduce oven temperature to 350°F and continue baking for 45–55 minutes, until the apples are tender when pierced and the topping is deep golden brown.
  9. If the topping browns too quickly, loosely tent the pie with foil for the remainder of the baking time.
  10. Remove the pie from oven and let cool on a wire rack for at least 1–2 hours to set before slicing.
