A comforting and flexible Tex-Mex style taco soup made with ground beef, chicken, or turkey, combining canned beans, corn, tomatoes, green chiles, and taco seasoning for a flavorful, easy-to-make meal.

  • 1 pound ground beef, or ground chicken or turkey
  • 1 medium white onion, chopped
  • 1 tablespoon minced garlic
  • 1.25 ounce package taco seasoning mix
  • 15 ounce can black beans, rinsed
  • 2 cups sweet corn, canned or frozen, drained
  • 8 ounce can tomato sauce
  • 2 cups beef broth, more as needed
  • 14.5 ounce can diced tomatoes
  • 4 ounce can diced mild green chile peppers
  • 1/3 cup chopped fresh cilantro
  • fresh lime wedges (for serving)
  • shredded Tex Mex cheese (for serving)
  • diced avocado (for serving)
  • corn tortilla chips or strips (for serving)

Instructions

  1. Heat a large soup pot over medium-high heat.
  2. Brown the ground meat with chopped onion until the meat is no longer pink.
  3. If using beef, drain excess fat; if using turkey, leave some fat in the pan to keep the meat juicy.
  4. Stir in the minced garlic and cook about 30 seconds until fragrant.
  5. Stir in the taco seasoning and cook 1–2 minutes.
  6. Add the rinsed black beans, drained sweet corn, tomato sauce, beef broth, diced tomatoes, and diced mild green chiles; stir to combine.
  7. Cover and simmer gently for 15–20 minutes, stirring occasionally.
  8. Remove from heat and stir in chopped fresh cilantro.

Notes

For turkey, retain some fat when draining to keep the meat moist., Adjust soup thickness with more broth or simmer uncovered to thicken., Enhance flavor by toasting cumin seeds or adding chipotle/ancho chili powders., Add fresh toppings like cilantro, lime, avocado, cheese, and tortilla chips at serving., Soup holds well refrigerated for 3–4 days and freezes well for up to 3 months without fresh toppings., To thicken quickly, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir into the simmering soup., Make vegetarian by omitting meat and using vegetable broth, adding extra beans or veggies., Control spice level by choosing mild green chiles for mild or adding cayenne/jalapeños for heat.
