  • 2/3 cup granulated sugar
  • 1 cup applesauce OR canola oil
  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F; grease two 8×4-inch loaf pans and line them with parchment paper.
  2. In a large bowl, whisk together the flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In a medium bowl, whisk together the canned pumpkin puree, brown sugar, granulated sugar, applesauce or canola oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined and no flour streaks remain, being careful not to overmix.
  5. Fold in the semi-sweet chocolate chips and mini chocolate chips, reserving a small handful to sprinkle on top if desired.
  6. Divide the batter evenly between the two prepared loaf pans and sprinkle the reserved chocolate chips on top if using.
  7. Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Allow the loaves to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
