A soft, moist pumpkin bread bursting with warm spices, easy to prepare from pantry staples, perfect for fall baking.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup white sugar
  • ½ cup packed light brown sugar
  • ½ cup oil
  • 1 (15-ounce) can pumpkin puree (about 1 ¾ cups)
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F and place rack in the lower-middle position; lightly grease a 9×5-inch loaf pan and line the bottom with parchment.
  2. Whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt in a medium bowl.
  3. In a large bowl, whisk the pumpkin puree with the white sugar and brown sugar until smooth, then whisk in the eggs, oil, and vanilla until combined.
  4. Slowly add the dry ingredients to the wet mixture, stirring gently until the batter is smooth and no dry flour streaks remain (do not overmix).
  5. Fold in about ½ cup chopped nuts or chocolate chips if using.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake 60–75 minutes, loosely tenting the loaf with foil halfway through to prevent over-browning; a toothpick inserted in the center should come out clean or with a few moist crumbs.
  8. Cool the bread in the pan for about 10 minutes, run a knife around the edges, flip onto a wire rack, and cool another 5–10 minutes before slicing.
