  • 3 cups (about 280g) graham cracker crumbs (roughly 22–24 whole graham crackers crushed)
  • 2 tablespoons granulated sugar
  • 3/4 cup (170g) salted butter, melted
  • 8 ounces (227g) cream cheese, softened to room temperature
  • 1 1/2 cups (171g) powdered sugar (confectioners’ sugar)
  • 2 cups (484g) cold heavy cream (at least 36% fat)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 5 to 6 medium fresh peaches, peeled, pitted, and thinly sliced (about 1/4 inch thick)

Instructions

  1. Combine graham cracker crumbs and granulated sugar in a bowl; pour in melted butter and mix until crumbs are evenly moistened, reserving 1/3–1/2 cup for topping.
  2. Press remaining crumb mixture firmly and evenly into the bottom of a parchment-lined 9×13-inch baking dish using the bottom of a flat cup to compact.
  3. Chill the crust in the refrigerator for 30 minutes.
  4. Beat softened cream cheese and powdered sugar in a large bowl on low-to-medium speed until smooth, scraping the sides and bottom as needed.
  5. In a chilled bowl, whip cold heavy cream with vanilla (and almond extract if using) to soft but stable peaks.
  6. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  7. Spread about half to two-thirds of the filling evenly over the chilled crust, pushing to the edges.
  8. Arrange sliced peaches in a single, even layer over the filling.
  9. Spread the remaining filling over the peaches and smooth gently.
  10. Sprinkle the reserved graham crumb mixture evenly over the top.
  11. Cover tightly with plastic wrap and chill in the refrigerator for at least 2 hours (3–4 hours or overnight for best set).
