A rich and creamy low-carb cheesecake with a crisp, nut-based crust reminiscent of graham crackers, perfect for Thanksgiving and other holidays.

  • 1 1/4 cups (125 grams) almond flour
  • 1 cup (110 grams) pecans or walnuts
  • 4 teaspoons (12 grams) coconut flour
  • 5 tablespoons (70 grams) unsalted butter
  • 1/3 cup (40 grams) Lakanto powdered sweetener OR 3 tablespoons (36 grams) THM Gentle Sweet (homemade version)
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon salt
  • 24 ounces (680 grams) full-fat brick-style cream cheese, softened
  • 1 cup (240 grams) canned pumpkin
  • 1 3/4 cups (210 grams) Lakanto powdered sweetener OR 2/3 cup (128 grams) Gentle Sweet (homemade version)
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3 large eggs (50 grams each), room temperature
  • Whipped cream (for serving)

Instructions

  1. Line the bottom of an 8-inch springform pan with parchment paper, grease the sides with butter, and preheat the oven to 350°F (175°C).
  2. Bring the cream cheese and eggs to room temperature.
  3. Place almond flour, pecans or walnuts, coconut flour, butter, sweetener, cinnamon, and salt in a food processor with the S-blade and pulse until pecans are chopped to about 1/8 inch and the mixture is evenly combined.
  4. Press the crust mixture firmly into the prepared pan, coming about halfway up the sides.
  5. Bake the crust for 10 minutes, until it looks dry and not shiny.
  6. If the crust droops during baking, press it back up with a spoon while still warm.
  7. Smooth any cracks or holes in the baked crust with a spoon and let cool and rest for 15 minutes.
  8. In a large bowl, beat the cream cheese, pumpkin, sweetener, pumpkin pie spice, vanilla, and salt on medium speed until smooth and well combined.
  9. Add eggs one at a time on low speed, mixing gently after each until incorporated without overbeating.
  10. Pour the filling into the cooled crust.
  11. Bake cheesecake at 350°F (175°C) for 50 minutes, until the center is slightly set (not super wobbly, but not fully firm).
  12. Turn off oven, open door, and let cheesecake sit inside for 30 minutes.
  13. Remove cheesecake and let come to room temperature for about 2 hours.
  14. Chill cheesecake in refrigerator for at least 8 hours or overnight before serving.
