  • 2 pounds boneless skinless chicken breast, cut into 1–2 inch chunks
  • 1 tablespoon olive oil
  • 1 tablespoon chicken base (concentrated bouillon paste)
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • 1 tablespoon freshly chopped parsley (for garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Cut the chicken into 1–2 inch bite-sized pieces.
  3. Place the chicken pieces in a 9×13-inch baking dish, spreading them in a single layer so they aren’t crowded.
  4. Pour 1 tablespoon olive oil and 1 tablespoon chicken base over the chicken.
  5. Add paprika, garlic powder, onion powder, black pepper, and dried thyme over the chicken.
  6. Toss or stir the chicken until all pieces are evenly coated with the oil and seasonings.
  7. Bake uncovered at 400°F for 15–20 minutes, or until the internal temperature of the largest pieces reaches 165°F.
  8. Let the chicken rest for 5 minutes.
  9. Toss the baked chicken with freshly chopped parsley before serving.
