Ingredients

Scale
  • 12 small to medium fresh blackberries
  • ½ cup (113g) unsalted butter, softened to room temperature
  • 3 Tablespoons (23g) powdered sugar

Instructions

  2. Place the blackberries in a medium bowl.
  3. Crush the blackberries with a fork or potato masher until they break down and release their juice.
  4. Strain the crushed berries through a fine-mesh sieve, pressing gently to collect about 1/4 cup clear blackberry juice; discard or reserve the seeds and pulp.
  5. Add the softened butter and powdered sugar to the strained blackberry juice.
  6. Whip the mixture with a handheld mixer (or stand mixer with the paddle) until silky, smooth, and fluffy.
  7. Taste and, if desired, stir in about 1/4 teaspoon salt and beat again.
  8. If you want texture, fold in 1–2 tablespoons of the reserved berry pulp.

Notes

Ensure butter is softened to room temperature for a smooth, fluffy mixture., Use a potato masher and fork to crush berries thoroughly before straining., Powdered sugar blends better than granulated sugar for a smooth texture., If using nondairy butter, expect initial separation; continue beating to combine., Store finished butter chilled to maintain freshness., Use salted butter or add flaky sea salt for a salty-sweet flavor twist., Try flavor variations by swapping berries, adding citrus zest, spices, or sweeteners such as honey or maple syrup., Freeze in portioned containers or logs wrapped in parchment for up to 6 months, and thaw in the refrigerator before use.
