A bright, fresh, and easy-to-prepare parfait layering creamy vanilla yogurt, juicy fresh peaches, and crunchy granola, perfect for breakfast, snack, or light dessert.

  • 2 (6-ounce) containers vanilla low-fat yogurt
  • 4 medium fresh peaches, peeled, pitted, and cut into 1/2–3/4-inch cubes
  • 3/4 cup granola
  • Optional garnish: peach wedges, berries (such as raspberries or blueberries), or fresh mint

Instructions

  1. Wash four medium peaches.
  2. If peeling, blanch peaches by dunking in boiling water for 30–60 seconds, then transfer to an ice bath and slip off skins.
  3. Peel (if desired), pit, and cut peaches into 1/2–3/4-inch cubes.
  4. Measure two 6-ounce containers of vanilla yogurt and 3/4 cup granola.
  5. Divide one 6-ounce container of yogurt evenly among four glasses or bowls.
  6. Sprinkle half of the granola (about 3/8 cup) over the yogurt.
  7. Distribute the cubed peaches evenly among the glasses.
  8. Top each parfait with the remaining yogurt.
  9. Add the remaining granola on top of each parfait.
  10. Garnish with peach wedges, berries, or fresh mint if desired.
