A quick and comforting taco-flavored soup made with ground beef, beans, vegetables, and a flavorful blend of taco and ranch seasoning. Perfect for busy weeknights, adaptable for various diets, and easy to customize with toppings and sides.

  • 1 pound ground beef (85/15)
  • 1 yellow onion, chopped
  • 2–3 tbsp taco seasoning (1 packet)
  • 2–3 tbsp ranch dressing mix (1 packet)
  • 15 ounces dark kidney beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 14.5 ounces canned diced tomatoes with chiles
  • 2 cups corn
  • 2 cups beef broth
  • 28 ounces crushed tomatoes

Instructions

  1. Heat a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add ground beef and chopped onion; cook, breaking up the beef, until browned and onions are soft, about 6–8 minutes.
  3. Drain excess fat if desired.
  4. Sprinkle in taco seasoning and ranch dressing mix; stir and cook 30–60 seconds.
  5. Stir in drained kidney beans, drained pinto beans, diced tomatoes with chiles, corn, beef broth, and crushed tomatoes until combined.
  6. Bring the soup to a gentle boil, then reduce heat and simmer uncovered.
  7. Simmer uncovered about 15 minutes, stirring occasionally; taste and adjust salt and pepper.
  8. (Optional) Slow cooker: after browning beef and onion, transfer everything to slow cooker and cook on low 3–4 hours or high 1.5–2 hours.
  9. (Optional) Instant Pot: use Sauté to brown beef and onion, add seasonings and remaining ingredients, seal lid, cook on high pressure 5 minutes, then quick-release pressure.
