A quick, comforting, and flavorful taco soup made with ground beef, canned corn, black beans, green chiles, salsa, and beef broth. Ready in about 30 minutes and customizable for various dietary preferences.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) corn (canned or frozen works)
  • 1 can (4 oz) green chiles
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup jarred salsa
  • 4 cups beef broth

Instructions

  1. Heat a large Dutch oven or soup pot over medium-high heat.
  2. Add ground beef and taco seasoning and brown, breaking the meat up into small pieces, until cooked through.
  3. Drain excess fat from the pot if desired.
  4. If using a slow cooker: transfer browned meat to slow cooker, add remaining ingredients, and cook on low 4–6 hours or high 2–3 hours.
  5. If using an Instant Pot: brown meat using sauté function (if not already browned), add remaining ingredients, pressure cook on high for about 5 minutes, then quick release.
  6. Add canned corn, rinsed and drained black beans, green chiles, jarred salsa, and beef broth to the pot and stir to combine.
  7. Bring the soup to a simmer, reduce heat and simmer uncovered about 10 minutes until slightly thickened and vegetables are tender.
  8. Taste and adjust seasoning, adding salt as needed at the end.
  9. If soup is too thin, simmer longer uncovered to reduce, mash some beans against pot side to thicken, or whisk in a cornstarch slurry (1 teaspoon cornstarch + 1 tablespoon cold water) and cook until thickened.

For a leaner soup, drain excess fat after browning beef., Use low-sodium beef broth and salsa for better salt control and add salt to taste., Add a squeeze of fresh lime juice or apple cider vinegar before serving to brighten flavors., To thicken soup, simmer longer, mash beans, or use a cornstarch slurry., Add crunchy toppings like tortilla chips, raw onion, or shredded lettuce just before serving., Avoid freezing fresh toppings, add them after reheating soup., When reheating, add a splash of broth to loosen soup if it thickened in the fridge.
