  • 1 teaspoon ground cinnamon
  • 2 cups peaches, peeled and diced
  • 1/2 cup oats

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat softened butter with granulated sugar and brown sugar until light and fluffy (about 2–3 minutes).
  3. Add eggs one at a time, mixing fully after each addition.
  4. Stir in vanilla extract.
  5. Whisk together flour, baking soda, salt, and cinnamon in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low until just combined.
  7. Gently fold in diced peaches and oats, taking care not to break up the peaches.
  8. Line baking sheets with parchment paper and scoop heaping spoonfuls of dough onto the sheets, spacing about 2 inches apart.
  9. Bake at 350°F (175°C) for 12–15 minutes, until edges are golden and centers feel soft.
  10. Let cookies rest on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
