A hearty one-pot soup that captures the classic lasagna flavors with Italian sausage, tender pasta, marinara sauce, and melty cheeses, ready in about 40 minutes for a comforting family meal.

  • 1 Tablespoon olive oil
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 1 pound mild Italian sausage, casings removed
  • 32 ounces chicken stock
  • 30 ounces petite diced tomatoes with juice (two 15-ounce cans)
  • 6 ounces tomato paste
  • 1 teaspoon ground oregano
  • ½ teaspoon Italian seasoning
  • 2–3 Tablespoons freshly chopped basil, more to taste
  • 8 uncooked lasagna noodles, broken into bite-sized pieces
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (optional)
  • Kosher salt and pepper to taste
  • Ricotta cheese for serving

Instructions

  1. Chop the onion, mince the garlic, chop the basil, grate the Parmesan, shred the mozzarella (if using), and break lasagna noodles into bite-sized pieces.
  2. Remove casings from the Italian sausage and crumble it.
  3. Heat 1 tablespoon olive oil in a large pot over medium heat.
  4. Add the chopped onion and cook for 2–3 minutes until soft.
  5. Stir in the minced garlic and cook for 1 minute until fragrant.
  6. Add the crumbled sausage, break it up with a spoon, and brown until no longer pink.
  7. Drain any excess grease from the pot.
  8. Add chicken stock, diced tomatoes with their juice, and tomato paste to the pot; stir to combine.
  9. Stir in oregano, Italian seasoning, and freshly chopped basil.
  10. Bring the soup to a gentle boil.
  11. Toss in the broken lasagna noodles and simmer for 8–10 minutes until noodles are tender but not mushy.
  12. Stir in the grated Parmesan and shredded mozzarella (if using); season with kosher salt and freshly ground pepper to taste.
  13. Ladle soup into bowls and top each serving with a spoonful of ricotta and extra basil.
