A comforting and hearty one pot lasagna soup that combines the flavors of traditional lasagna in a tomato-based broth with pasta and a three-cheese blend, made in about 45 minutes.

  • 1–2 tablespoons Olive Oil, or preferred oil
  • 1 pound Ground Beef
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 (15-ounce) can Diced Tomatoes, with juice
  • 1 (15-ounce) can Tomato Sauce or tomato puree
  • ⅓ cup Tomato Paste (about half of a 6-ounce can)
  • 4 cups Chicken Broth
  • 1–2 cups Water, to adjust consistency
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Salt, or more to taste
  • Black Pepper, to taste
  • 8 ounces Bowtie Pasta (uncooked), or similar sturdy pasta
  • ½ cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese, shredded (about ½ cup)
  • ¼ cup Parmesan Cheese, shaved, shredded, or fresh grated
  • ¼ cup Fresh Parsley, chopped

Instructions

  1. Heat a large (~4.5-quart) soup pot over medium-high heat and add olive oil until shimmering.
  2. Add ground beef, diced onion, and minced garlic; cook, stirring occasionally, until beef is fully browned and onions are soft; drain excess fat if desired.
  3. Stir in diced tomatoes with their juice, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper; mix well to dissolve the tomato paste.
  4. Add uncooked pasta to the pot.
  5. Increase heat to high and bring the soup to a boil.
  6. Reduce heat to medium, loosely cover, and simmer for 10–15 minutes until the pasta is tender, stirring often to prevent sticking; add water or broth gradually if the soup becomes too thick.
  7. Remove from heat and either stir in ricotta, shredded mozzarella, and Parmesan cheese once slightly cooled or serve cheeses on the side to top individual bowls along with chopped parsley.

Use sturdy pasta shapes like bowtie, penne, rigatoni, or macaroni for best texture after reheating., Broken up lasagna noodles can be added but soften faster; add them closer to serving or eat fresh., Cheeses can be mixed into the soup or served on the side., A sprinkle of fresh parsley adds flavor and color., Protein swaps: ground beef can be replaced with ground meats or plant-based options., For thicker tomato broth, crushed tomatoes can substitute diced tomatoes., Marinara sauce (24-ounce jar plus 1 cup water) can replace all canned tomato products., For reheating, add broth or water as pasta absorbs liquid over time., Store leftovers in an airtight container refrigerated up to 5 days or freeze up to 3 months (without cheese toppings). Add fresh cheese when serving after freezing.
