A collection of simple, dump-and-go slow cooker recipes using boneless chicken breasts or tenderloins that produce juicy, shreddable chicken perfect for tacos, bowls, sandwiches, chili, pot pie, and creamy comfort dishes.

Ingredients

  • Boneless, skinless chicken breasts or tenderloins, fresh or fully thawed, quantity as needed for servings.
  • Broth or water, about 1/2 to 1 cup to cover the bottom of the slow cooker (chicken broth, beef broth, or water with bouillon).
  • Sauces and condiments like teriyaki sauce, soy sauce, ranch seasoning, cream cheese, salsa, tomato sauce, quantities vary per recipe.
  • Onion, garlic, bell peppers, green chiles, beans, frozen peas and carrots, quantities as desired for mix-ins.
  • Spices and seasonings: salt, pepper, chili powder, cumin, Italian seasoning, paprika, amounts to taste.
  • Optional finishing touches: shredded cheese, sour cream, cilantro, avocado, tortillas, biscuits, or pie crust for pot pie, quantities as desired.
  • Bacon (for crack chicken variation), quantity as desired.
  • Cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water) as thickener, optional.

Instructions

  1. Thaw chicken completely; never cook frozen chicken in the slow cooker.
  2. Trim off excess fat and pat chicken dry; slice horizontally if breasts are thick for even cooking.
  3. Optionally sauté onions and garlic briefly until softened, then add to the slow cooker.
  4. Place chicken in a single layer in the slow cooker insert.
  5. Add vegetables and other mix-ins like peppers, green chiles, and beans as desired.
  6. Pour in enough sauce or broth to just cover the bottom, about 1/2 to 1 cup, or as recipe specifies.
  7. Season with dry spices or seasoning packets; stir to distribute.
  8. Do not fill crockpot more than two-thirds full to allow proper heat circulation.
  9. Cover and cook on low for 6–8 hours or on high for 3–4 hours; check internal temperature starting at low end to avoid overcooking (target 165°F minimum; shreddable at 180–190°F).
  10. For chili-style recipes, drain canned beans and add during last hour of cooking.
  11. Remove chicken and shred with two forks or a mixer paddle, or slice as desired.
  12. If sauce is too thin, whisk in cornstarch slurry and simmer on high for 10–15 minutes.
  13. Stir shredded chicken back into sauce; optionally add cream cheese or other finishing ingredients for creamier sauce.
