A creamy, tender chicken recipe cooked in a crockpot with potatoes, baby carrots, and a ranch-flavored sauce, perfect for an easy and comforting main course.

  • 4 boneless skinless chicken breasts
  • 4 Russet potatoes, cut into 2-inch pieces
  • 2 cups baby carrots
  • 1 packet dry ranch dressing mix
  • 1 can cream of chicken soup (10 oz)
  • 1 cup milk

Instructions

  1. Spray the inside of the crock pot with non-stick spray or line it with a crockpot liner.
  2. Cut russet potatoes into about 2-inch chunks.
  3. Thaw chicken breasts completely if frozen.
  4. In a small bowl, whisk together the cream of chicken soup, milk, and dry ranch dressing mix until smooth.
  5. Layer the potato chunks and baby carrots in the bottom of the crock pot.
  6. Nestle the chicken breasts on top of the potatoes and carrots.
  7. Pour the ranch sauce evenly over the chicken, potatoes, and carrots.
  8. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  9. Check that the chicken reaches an internal temperature of 165°F (74°C).
  10. If desired, shred the chicken with two forks or a stand mixer and stir it back into the sauce.
  11. Season with salt and pepper to taste.
  12. If the sauce is separated after cooking, remove the chicken and veggies, whisk the sauce until smooth (warming gently if needed), then return everything to the crock pot and heat a few minutes to recombine.
  13. If the sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water, stir into the crock pot, and cook on high for 10–15 minutes or thicken on the stovetop.
