A simple and comforting slow cooker meal featuring tender shredded chicken in a flavorful gravy, perfect for busy weeknights and served over rice or potatoes.

Ingredients

Scale
  • 3 to 4 boneless, skinless chicken breasts
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • 2 (0.87-oz) envelopes chicken gravy mix
  • 1/2 to 1 cup water or chicken broth (optional, for thinner gravy)
  • Hot steamed rice (for serving)

Instructions

  1. Thaw chicken if starting from frozen.
  2. Place 3–4 boneless skinless chicken breasts in the slow cooker and season with salt and pepper or seasoned salt, if desired.
  3. In a bowl, whisk together one 10.5-oz can cream of chicken soup and two (0.87-oz) envelopes dry chicken gravy mix; add 1/2 to 1 cup water or chicken broth if you want a thinner gravy.
  4. Pour the soup and gravy mixture over the chicken in the slow cooker.
  5. Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken is cooked through (internal temperature 165°F and no pink inside).
  6. Shred the chicken directly in the slow cooker with two forks into bite-sized pieces and stir to combine with the gravy.
  7. If the gravy is too thin after cooking, mix a little cornstarch with cold water, stir it into the gravy, and heat until thickened.

Notes

Use boneless skinless chicken thighs for juicier meat but adjust cooking time for bone-in pieces., Do not start cooking from frozen chicken to ensure food safety., Do not prepare the dry gravy mix separately; whisk it into the cream of chicken soup with broth or water before adding to the slow cooker., For a thinner gravy, add 1/2 to 1 cup water or chicken broth when mixing soup and gravy mix., If the gravy is too thin after cooking, thicken it with cornstarch mixed with cold water and gently heated., For a gluten-free version, use certified gluten-free cream soup and gravy mix or make a homemade thickened sauce., Can double the recipe by using a larger slow cooker, increasing cooking time slightly and checking internal temperature for safety., Alternative soups like cream of mushroom or low-sodium versions can be used, along with any chicken-flavored dry gravy mix.
