A simple, hands-off crock pot recipe for juicy, flavorful pork loin roast using basic ingredients and slow cooking methods. Perfect for family meals and versatile for slices or pulled pork.

Ingredients

Scale
  • 3–4 pounds boneless pork loin
  • 1 large sweet onion (such as Vidalia)
  • 2 tablespoons olive oil
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 2 cups broth (chicken broth recommended)
  • Cooking spray

Instructions

  1. Spray the bottom and sides of the crock pot well with cooking spray.
  2. Slice the onion into even round slices.
  3. Optional: quickly sear the pork loin in a hot pan until browned, then proceed to the next step.
  4. Arrange the onion slices in the bottom of the crock pot to form a bed.
  5. Place the pork loin on top of the onions, fat side facing up.
  6. Drizzle the pork loin with olive oil.
  7. Sprinkle granulated garlic, onion powder, black pepper, salt, and paprika evenly over the pork and rub gently to coat.
  8. If adding vegetables, cut them into large chunks (about half a golf-ball size), nestle them under the pork on top of the onions, and add an extra ½ cup broth.
  9. Pour 2 cups broth into the crock pot around the pork (not on top).
  10. Cover and cook on LOW about 6 hours or on HIGH about 4 hours (for a frozen 5-lb loin, cook roughly 8 hours on low or 4 hours on high) until internal temperature reaches 145°F.
  11. Check the internal temperature with a meat thermometer around the 4-hour mark for large roasts, and switch the crock pot to WARM if it reaches 145°F before serving.
  12. Remove the pork loin from the crock pot and reserve the cooking juices.
  13. To make pulled pork: shred the cooked pork with two forks, return shredded meat to the crock pot with about ½ cup cooking liquid per cup of meat and ½ cup BBQ sauce per pound, and cook on HIGH at least 30 minutes until bubbly and heated through.

Notes

Lining the crock pot with sliced onions prevents sticking and adds flavor., Add vegetables like potatoes or carrots tucked under the pork to cook evenly with flavorful drippings., Cooking times vary with crock pot size and pork loin weight; check temperature early to avoid overcooking., Searing the pork loin before slow cooking adds flavor but is optional., Leftover pork can be used for sandwiches or reheated with broth or BBQ sauce to maintain moisture., Store leftovers in airtight containers; refrigerate for 3-4 days or freeze up to 3 months., Reheat pork to an internal temperature of 165°F using oven, slow cooker, or microwave methods.
