Golden brown chicken breasts smothered in a creamy parmesan sauce packed with mushrooms, sun-dried tomatoes, and fresh spinach. A quick and easy dinner perfect for busy weeknights and entertaining.

  • 1 1/4 lbs thin boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 8 ounces button mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 1/2 teaspoons minced garlic
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 cup baby spinach leaves
  • 1/3 cup oil-packed sun-dried tomatoes, coarsely chopped
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat and season chicken breasts with salt and pepper.
  2. Add chicken to the hot skillet and cook 4–5 minutes per side until golden brown and cooked through.
  3. Remove chicken to a plate, cover with foil to keep warm, and wipe out the pan with a paper towel.
  4. Melt butter in the same pan, add sliced mushrooms, and cook 5–6 minutes until tender and browned.
  5. Add minced garlic and cook about 30 seconds until fragrant, then sprinkle in flour and whisk to form a smooth mixture.
  6. Whisk in chicken broth and heavy cream, bring to a gentle simmer, and season the sauce with salt and pepper to taste.
  7. Stir in grated Parmesan until melted, then add spinach and chopped sun-dried tomatoes and cook until the spinach wilts.
  8. Turn off the heat, return the chicken to the pan, spoon the sauce over each piece, and garnish with chopped fresh parsley.
