An easy, one-pan weeknight meal with tender butterflied chicken breasts simmered in a rich and garlicky cream sauce. Ready in 20 minutes, this dish is comforting and versatile.

Ingredients

Scale
  • 2 tablespoons oil
  • 2 boneless skinless chicken breasts (butterflied into two thin pieces each)
  • Salt and pepper, to taste
  • 2 tablespoons freshly minced garlic (about 4–6 cloves)
  • 3/4 cup heavy whipping cream
  • 1/2 cup low sodium chicken broth
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Warm 2 tablespoons oil in a large skillet over medium-high heat.
  2. Butterfly each chicken breast by slicing horizontally to create two thinner pieces.
  3. Season both sides of the chicken with salt and pepper.
  4. Add chicken pieces to the hot skillet and brown for about 3 to 4 minutes per side until golden and cooked through.
  5. Add 2 tablespoons minced garlic to the pan and cook for 1 minute until fragrant, careful not to burn.
  6. Pour in 3/4 cup heavy whipping cream and 1/2 cup low sodium chicken broth; sprinkle in 1/2 teaspoon dried parsley, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
  7. Turn heat to medium and simmer for 5 to 8 minutes, stirring occasionally, until the sauce thickens slightly and the chicken reaches an internal temperature of 165°F.
  8. Taste and adjust seasoning if needed before serving.

Notes

Whole chicken breasts can be used but will require longer cooking time and additional sauce to maintain moisture., For a saucier dish suitable for pasta, double the sauce ingredients and add 1 teaspoon cornstarch to thicken faster., Using whole garlic cloves instead of minced garlic results in a milder garlic flavor., Dusting chicken with flour or cornstarch before browning can create a crispier crust and help the sauce cling better., Use a thermometer to ensure chicken reaches 165°F for safety and juiciness., Add vegetables like sliced onions, bell peppers, zucchini, mushrooms, or spinach to make a one-pan meal., Optional: Add cayenne pepper or crushed red pepper flakes for heat.
