Instructions

  1. Soften cream cheese by leaving it out for 15–20 minutes or microwaving for 5–8 seconds until spreadable.
  2. In a medium bowl, mix softened cream cheese with ranch dressing mix, shredded cheddar cheese, and 1 tablespoon milk; beat until smooth, adding up to 1 additional tablespoon milk if needed for a spreadable texture.
  3. Fold in chopped cooked bacon and chopped cooked chicken until evenly combined.
  4. If tortillas are stiff, wrap them in a damp towel and microwave for 5–8 seconds to soften.
  5. Lay a tortilla flat and spread about 1/4 cup of the chicken mixture evenly over the surface, leaving a small border around the edges.
  6. Roll the tortilla up gently but snugly so the filling stays inside.
  7. Wrap each roll tightly in plastic wrap or place seam-side down to keep its shape.
  8. Refrigerate the wrapped rolls for at least 30 minutes or overnight to firm up the filling.
  9. Unwrap chilled rolls and trim off the ends if desired.
  10. Slice each roll into 1-inch thick pinwheels using a sharp serrated knife with a gentle back-and-forth sawing motion.
  11. Keep pinwheels chilled until serving, or heat on a baking sheet in a 350°F oven for 8–10 minutes if serving warm.
