A shortcut chicken pot pie casserole featuring creamy chicken and vegetable filling topped with golden, buttery biscuits, using rotisserie chicken and Pillsbury Grands biscuits for quick and easy preparation.

Ingredients

Scale
  • Shredded rotisserie chicken (or about 2 pounds boneless chicken breasts, cooked and shredded)
  • Frozen mixed vegetables (classic blend: corn, peas, carrots, green beans)
  • 1 can cream of chicken soup
  • Milk (quantity not specified, typically about 1/2 cup)
  • Salt (to taste)
  • Pepper (to taste)
  • 4 tablespoons butter, divided (2 tablespoons melted for cooking veggies, 2 tablespoons mixed with garlic powder for biscuit topping)
  • Garlic powder (quantity not specified, to brush on biscuits)
  • 1 can Pillsbury Grands biscuits (larger Grands biscuits)
  • Nonstick spray (for baking dish)

Instructions

  1. Preheat oven to 375°F and spray a 9×13-inch baking dish with nonstick spray.
  2. Place Pillsbury Grands biscuits on a baking sheet and prebake for 8 minutes; remove and keep oven on.
  3. Melt 2 tablespoons butter in a large skillet over medium-high heat.
  4. Add frozen mixed vegetables to the skillet and cook, stirring every few minutes, for 10–15 minutes until warm and beginning to soften.
  5. In a small bowl, whisk together cream of chicken soup, milk, salt, and pepper until smooth.
  6. Add shredded rotisserie chicken and the soup mixture to the skillet with vegetables; cook about 5 minutes until sauce bubbles and everything is heated through.
  7. Pour the hot filling evenly into the prepared baking dish.
  8. Arrange prebaked biscuits on top of the filling with baked/golden sides facing down and raw sides facing up.
  9. Mix the remaining 2 tablespoons butter with garlic powder, melt, and brush or drizzle this butter over the biscuit tops.
  10. Bake the casserole uncovered for 10–12 minutes, then loosely tent with foil and bake another 10–12 minutes until biscuits are golden and the filling bubbles.
  11. Let the casserole rest 5–10 minutes before serving.

Notes

Prewhisking the cream of chicken soup and milk with salt and pepper before adding to the skillet results in a smooth, creamy filling., Prebaking biscuits and tenting with foil during baking prevents undercooked centers and burnt tops., Freezing just the filling before adding biscuits gives best texture upon reheating., Use low-sodium soup and unsalted butter with adjusted salt for a lower sodium version., Smaller biscuit brands may brown too fast and remain undercooked inside; larger Grands biscuits are preferred., Do not use steamed dumplings as a topping; they won’t create the crisp biscuit texture needed.
