Ingredients

Scale
  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1 tsp black pepper
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or more sliced cheese)
  • 24 dinner rolls (or 2 packs of 12)
  • 2 Tbsp unsalted butter, melted, plus more for greasing baking sheet
  • Diced onion (amount not specified)
  • A drizzle of olive oil (amount not specified)
  • Salt (to taste)
  • Garlic powder (to taste)
  • Mayonnaise (amount not specified)
  • Sesame seeds (amount not specified)

Instructions

  1. Preheat oven to 350°F and lightly grease a rimmed baking sheet with butter.
  2. Heat a large skillet over medium-high heat with a drizzle of olive oil.
  3. Add diced onion to the skillet, then add the 2 lb lean ground beef and break it apart with a spatula as it cooks.
  4. Season the beef with salt, black pepper, and garlic powder and cook until fully cooked.
  5. Tilt the skillet and drain off excess fat and liquid.
  6. Stir mayonnaise into the cooked beef to bind and add creaminess.
  7. Slice the dinner rolls horizontally and place the bottom halves on the buttered baking sheet.
  8. Line the bottom halves of the rolls with slices of cheddar cheese.
  9. Spread the cooked beef mixture over the cheese, smoothing and squaring the edges with the back of a spatula.
  10. Sprinkle shredded cheddar evenly over the beef.
  11. Place the top halves of the rolls cut-side down onto the cheese layer.
  12. Brush the roll tops with melted butter and immediately sprinkle with sesame seeds.
  13. Bake uncovered at 350°F for 12–15 minutes, until the cheese is melted and the tops are golden brown.

Notes

Spoon out excess fat and liquid from the beef to prevent soggy buns., Layer sliced cheese under and shredded cheese over the beef to seal flavor and moisture., Brush melted butter on top buns and sprinkle sesame seeds immediately for better adherence., Bake the sliders uncovered to avoid steam softening the rolls., To reheat leftovers: Microwave uncovered for 15–20 seconds or heat a full tray in the oven at 350°F until warm and cheese melts., Recipe scales perfectly to half with same baking time., Sliders can be made ahead and refrigerated up to 24 hours before baking, adding about 3 minutes to bake time if baking chilled., Fully cooked sliders can be frozen for up to one month; thaw overnight before reheating.
