Juicy and cheesy bite-sized sliders made with seasoned lean ground beef and cheddar cheese, assembled on soft dinner rolls, perfect for quick meals, parties, and meal prepping.

  • 2 lb lean ground beef (90/10 or 93/7 fat content works best)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or more sliced cheese if preferred)
  • 24 dinner rolls (or two 12-packs)
  • 2 Tbsp unsalted butter, melted, plus extra to grease baking sheet
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat oven to 350°F and butter the bottom of a rimmed baking sheet.
  2. Finely dice 1/2 large yellow onion.
  3. Heat a large skillet over medium-high heat with 1/2 Tbsp olive oil.
  4. Add diced onion, then 2 lb ground beef to the skillet, breaking it apart with a spatula.
  5. Season beef with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder.
  6. Cook beef until it just loses its pink color, then remove skillet from heat.
  7. Tilt skillet and spoon off any excess fat to avoid soggy sliders.
  8. Stir 1/4 cup mayonnaise into the cooked beef mixture for creaminess.
  9. Slice the 24 dinner rolls in half.
  10. Place bottom halves of rolls on the buttered baking sheet and lay a slice of cheddar cheese on each bottom bun.
  11. Spread the beef mixture evenly over the cheese and square off with a spatula.
  12. Sprinkle 6 oz shredded cheddar over the beef.
  13. Place the top halves of the buns cut-side down over the filling.
  14. Brush the tops of buns with melted 2 Tbsp unsalted butter, then immediately sprinkle 1 Tbsp sesame seeds on top.
  15. Bake uncovered at 350°F for 12–15 minutes until cheese melts and tops are golden brown.

To prevent soggy buns, remove excess fat from cooked beef and place a slice of cheese on the bottom buns to lock in juiciness., Brush melted butter and sprinkle sesame seeds on top buns immediately for best adhesion and classic look., Bake uncovered to keep rolls crisp instead of steamy and mushy., These sliders can be assembled up to one day ahead and refrigerated before baking.
