  • 1 cup diced yellow onions
  • ½ cup all-purpose flour
  • 3 cups chicken broth
  • 3 cups milk
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 10 oz broccoli florets, chopped
  • 3 cups shredded triple cheddar cheese blend

Instructions

  1. Chop broccoli into even-sized florets.
  2. Shred cheddar cheese (preferably freshly grated).
  3. Melt butter in a large pot over medium heat.
  4. Add diced onions to the melted butter.
  5. Cook onions until translucent and soft.
  6. Sprinkle in all-purpose flour and stir to combine with the butter and onions.
  7. Cook the roux, stirring, for about 3 minutes to remove the raw flour taste.
  8. Slowly whisk in chicken broth, whisking constantly to avoid lumps, until the mixture thickens.
  9. Pour in the milk while whisking until smooth.
  10. Stir in onion powder, garlic powder, salt, and pepper.
  11. Add the chopped broccoli and stir to combine.
  12. Simmer gently over medium heat for about 15 minutes, stirring often to prevent sticking and ensure even cooking.
  13. Remove the pot from the heat and gradually add the shredded cheddar, stirring until fully melted and smooth; do not boil after adding cheese.

Notes

Grate your own cheddar cheese for a smoother melt; avoid pre-shredded cheese with anti-caking agents to prevent graininess., Melt cheese gently off the heat to maintain silky texture and prevent separation., Cook the roux well (2-3 minutes) to avoid raw flour taste., Whisk liquids slowly to prevent lumps and ensure smooth base., Adjust thickness by adding broth or milk if too thick, or simmering down or using a cornstarch slurry if too thin., Simmer gently to avoid dairy curdling or sticking to pot bottom., Taste before adding extra salt as cheese and broth add saltiness., Frozen broccoli can be used; simmer longer to achieve desired thickness., Vegetarian option: substitute chicken broth with vegetable broth., To make gluten-free, replace flour roux with gluten-free flour or cornstarch slurry., For lower fat: use low-fat milk, reduce butter and cheese, and add more broccoli., Add-ins like cooked bacon, diced ham, or caramelized onions can enhance flavor.
