Instructions

  1. Place chicken breasts or thighs in the bottom of the slow cooker.
  2. Pour thick teriyaki sauce over the chicken; add minced garlic, grated ginger, and pineapple juice if using. Do not stir.
  3. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken reaches 165°F and shreds easily.
  4. Remove chicken to a plate or shred directly in the slow cooker using two forks or meat claws.
  5. In a small bowl, whisk 2 tablespoons cornstarch with 2 tablespoons cold water until smooth to make a slurry.
  6. Pour the slurry into the slow cooker, stir gently to combine, set slow cooker to HIGH, cover, and cook for 10–15 minutes, stirring once halfway, until the sauce thickens into a glaze.
  7. Add shredded chicken back to the slow cooker and scatter fresh broccoli florets on top.
  8. Cover and cook on HIGH for another 20–30 minutes until broccoli is tender but still vibrant.
  9. Serve the chicken and broccoli over steamed white rice (or preferred grain), and garnish with sesame seeds and sliced green onions.
