This cheesy Baked Parmesan Zucchini is quick, easy, and an incredibly satisfying veggie side.

  • 2 medium zucchini, sliced into 1/4 to 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup freshly grated parmesan (pre-shredded is also fine)

Instructions

  1. Preheat your oven to 450°F and optionally line a broiler-safe baking sheet with foil.
  2. Arrange zucchini rounds on the baking sheet and drizzle with olive oil. Toss until each piece is lightly coated. Spread out in a single even layer without overlapping.
  3. Season generously with salt and pepper.
  4. Sprinkle a good amount of parmesan cheese over each zucchini slice.
  5. Bake on the middle rack for about 10 minutes, or until zucchini is just tender.
  6. Set your oven to broil high and place the pan on the top rack. Broil 2 to 3 minutes until the cheese bubbles and turns golden brown, watching closely to avoid burning.
  7. Remove the pan, let the zucchini cool 1–2 minutes, and serve immediately.
