A fast, comforting one-pot pasta dish with browned chicken, garlic, Parmesan, and spinach in a creamy sauce made with pantry staples. Ready in about 30 minutes with minimal cleanup.

  • 1 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 12 oz penne or rotini pasta
  • 3 cups low-sodium chicken broth
  • 1 cup whole or 2% milk
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese divided
  • 1 tsp Italian seasoning
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 2 cups baby spinach (optional)

Instructions

  1. Brown chicken pieces in butter over medium-high heat until mostly cooked, about 4–5 minutes.
  2. Add garlic and Italian seasoning; cook about 30 seconds until fragrant.
  3. Pour in chicken broth and milk, scraping up browned bits, then add pasta and salt.
  4. Bring to a simmer, cover, and cook 10–12 minutes, stirring occasionally, until pasta is tender.
  5. Stir in 3/4 cup Parmesan and spinach until the cheese melts and spinach wilts; season to taste.
  6. Top with remaining Parmesan and freshly ground black pepper before serving.
